Pizza Toppings Idea #1: Cajun Chicken

So… here I am, going on and on about this chicken I managed to defrost by using our fat oven setting and I realized- I have nothing to eat this chicken with! After a long heated debate of chicken fajitas vs chicken nachos, we came to a decision: chicken pizza.

I decided to start a blog series about pizza topping ideas, as I feel so many of us resort to the usual pepperoni (myself included!). I’m never the most adventurous when it comes to pizza.

Before I begin I thought I would go through a few dough options:

I’ve done a range a things before when making my pizza, from pre-being the thin base already made, to buying the dough, to making the dough myself. Tescos, Asda, Morrisons all have a wide range of pizza base ideas that are affordable for student and of little hassle – depending if you want to make your own base or just use an already booked thin “flat bread” sort of base.

Pizza Sauce: 

Again pizza bases can be store bought in a jar, made easily by throwing some pepper and tomato sauce together, or made with a bit more pizzaz. My favorite pizza base recipe is also from BBC good food  (I can barely resist any of their recipes!)

Pizza Topping: 

I chose to do a cajun chicken pizza, as its very close to home for me – and I was missing some home-like food!

 

Ingredients:

  1. Pizza sauce (home made or store bought – see above)
  2. Pizza Base (home made or store bought – see above)
  3. Chicken Breast
  4. Red onion
  5. Cajun Seasoning
  6. Garlic
  7. Red Pepper
  8. Mozzarella Cheese
  9. Basic (for taste)
  10. Salt
  11. Pepper

 

Steps: 

1. Preheat oven to 200 C.

2. Heat oil in pan and put in diced bell peppers and red onions.

3. Slice chicken into small slices and put in pan to fry with onions and bell peppers. Add sliced garlic once almost cooked thru.

 

4. On pizza base add sauce, mozzarella cheese, and basil while toppings are cooking on stove.

5.  Sprinkle in salt, pepper, and cajun spices once almost fully cooked. Once cooked, repeat sprinkling of salt, pepper, and cajun spices. (Add as desired for strong flavor).

6. Placed in oven for about 5 minutes or until cheese is beginning to melt.

7. Once cheese is beginning to melt, place cooked topping on top of pizza and place back in oven until cheese is bubbling and fully melted.

8. Take out oven, sprinkle some more basil and cajun spices if desired.

Turkey Burgers and Fries #healthyliving…sortof

I’ve always been a massive fan of turkey burgers. In fact, just burgers. I came up with the idea of adding garlic and onions a few months ago when I went on a health kick, but still wanted some flavorful food. My flat mate is absolutely inspiring when it comes eating healthy and getting creative with food, so I decided to make this for her as a thank you for her great support of my new cooking adventure!

Turkey mince is very low in fat and if cooked right, is a great substitute for beef mince. With this post I want to show how easy a decent meal can be – and especially, how delicious

Ingredients:

  • turkey mince
  • onion
  • garlic
  • potatoes
  • salt
  • petter
  • cajun spice (optional)
  • condiments (optional)
  • lettuce
  • tomato
  • cheese
  • bread (optional)

Steps for Burger Patty:

  1. Dice onions and garlic.

  1. Mix onion and garlic in turkey mince.

  1. Take the mince and form into small patties (to preference… I usually do about 2.5-3 inch dimeter)
  2. Preheat grill to desired cooking temperature depending on grill (For US ovens, use 350F).
  3. Place patty on baking tray and place in over – if on grill setting, rotate patty evert 8-10 minutes depending on temperature. Cook until cooked all the way through and there is no pink left.
  4. Fry onions on stove if desired for a topper and add lettuce and tomato to burger bun (toasting burger bun is optional, but recommended).

Steps for Fries:

  1. Chop potatoes into small wedge-like pieces and sprinkle salt as desired.

  1. Preheat oil on stove.

  1. Dump fries in oil and let cook until golden brown and medium texture.
  2. Remove from oil and place in paper towel to remove excess oil.
  3. Sprinkle salt, pepper, and other spices as desired on fries.
  4. (I often add salt vinegar as well!)

Spinach Dip #studentstyle

Spinach dips have always been one of my favorite snacks. These easy dips are fairly healthy (if used with the right ingredients) and provide a cheap party solution if you’re having friends over.

Every monday my flat mates and I host a painfully awkward Made in Chelsea Party where we provide some beautiful snacks, drinks, and over all (cheap) fun. #studentlife

Here is my take on a spinach dip (ultimately, it’s like a normal dip minus the water chestnuts… because fishing villages don’t sell those!)

Ingredients:

20 ounces of spinach (defrosted and drained) (600 g)

1 cup of cottage cheese (light) (300 g)

1 cup of Mayo (light) (300 g)

2 cups of 0% Greek Yoghurt (600 g)

3 Gloves garlic

2 Onions

1 can of water chest nuts (optional)

Steps:

1. Fry up onions until lightly golden brown. Add garlic when onions are done.

2. Meanwhile, mix together yoghurt, cottage cheese, and mayo. Add in onion and garlic mixture once cooled.

3. In  food processor, add spinach, yoghurt, cottage cheese, mayo, onion and garlic mixture. Process for about 15-20 seconds, unti smooth (or until desired texture).

4. In bowl, add in water chestnuts if dedired.

5. Cut off top of bread and take out inside of bread bowl.

6. OPTIONAL: Warm up spinach dip.

I served with some crisps and toasted bread from the inside of the bead bowls!

Viennese Biscuits #noswirlswarley

So there I am, sitting in class, pretending to do work and it hit me – I need dessert. It’s amazing how recently my body clock has been so thrown off that I’ve been ditching the usual food routine of breakfast, snack, lunch, snack, dinner, snack, etc. Instead, it’s been dinner for breakfast and breakfast for dinner!

I recently got invited to a dinner party, and at the request of the wonderful host who has seen my blog and witnessed my cooking, I was asked to make a dessert (not that this was a great sacrifice, mind you!)

And here we have it – my take on the Viennese Swirl, cause let’s face it, what student has a pastry kit at home. #notthisone #worstfoodbloggerever

Ingredients:

 

Biscuits-

250 g butter (very warm)

50g icing sugar

200g flour

50g cornflour

1/2 tsp vanilla extract

 

Filling-

Jam

200g icing sugar

100g butter (very warm)

1/2 tsp vanilla extract

 

Steps:

  1. Mix the butter, flour, icing sugar, cornflour, vanilla extract in a mixing bowl with an electric whisk until smooth, milk may be added if necessary.

  1. Set oer to 190 C.
  2. Put small amounts on grease paper and place in oven for 10-15 minutes until golden brown.
  3. Take out and let cool.

  1. Put icing sugar, butter, and vanilla extract in another bowl to make filling and mix with wooden spoon until smooth. Water may be added if necessary.

  1. Once cookies are cooled, place the filling on one half and jam on the other, and place together to make sandwhich-like appearance.

Homemade French Fries

Right, so there I am, looking at my boring leftover chicken breast and wondering – what interesting side can I do today? As I took out the baking tray to make my usual baked potato wedges, it hit me – why not just fry them?

While this is a simple (and obvious) recipe, I wanted to add it to my blog for creative ideas to make that boring student meal just a little bit more fun!

 

Ingredients:

Potato

Salt

Pepper

Cajun Spices (optional)

Vegetable or Sesame Oil (I did this in sesame)

 

Steps:

1. Slice the potato in thin wedges.

2. Boil the oil.

3. Fry the potatoes for approx 5 minutes, or until golden brown and of medium softness.

4. Place in bowl and spring salt, pepper, and desired spices.

Phillycheese Steak Mac and Cheese

In searching the web for some new and creative food ideas, I came across a very interesting idea of turning basic meals into mac and cheese meals! The idea of adding anything to cheesey pasta is simply delightful, just ask any of my flat mates. Me and cheese – we go way back.

This recipe was super easy – changed a few things to make it my own. Took me about 10 minutes to prepare and 15 to cook! It also made enough to feed a small army which pleased my flat mates (as they eat as much as a small army!)

Ingredients: 

Pasta of Your Choosing (I always go with the classic mac and cheese shaped ones)

Vegetable Oil

Olive Oil

Salt

Bell Pepper (for taste)

Onion

Pepper

Roast Beef Sliced and Cooked

Edam Cheese

Cheddar Cheese

Evaporated Milk (100 ml) (more if creamier)

Water (100 ml) (more if lighter)

2 Eggs

Steps: 

1. Chop onion and pepper (3-5 min)

2. Fry in pan with vegetable oil.

 

3. Boil water for pasta

4. Place Pasta in boiling water

5. Put roast beef in pan to warm.

6. Put pan on low heat and keep peppers, onions, and roast beef warm.

7. When pasta is cooked, drain pasta.

8. In a big bowl or pan, stir in roast beef, peppers, and onion with the pasta.

9. Add cheese mixture last (the amount of mixture is up to you!)

Sauce:

1. In mix pan on low heat, stir in 2 eggs, evaporate milk, cheddar cheese, and edam cheese.

2. Leave to simmer, stirring frequently.

Fried Brie and Cranberry Snack

Snacks have always been my favorite thing. Whether its sweet or savory, snacks dominate a students life during deadline season. I convinced myself to make this a healthy blog  and certainly feel the irony of making my first post about fried food!

… but that’s just the south within me! When in doubt and feeling down due to studying, its all about the comfort food.

Enjoy my take on fried brie (or camembert!)

Ingredients: 

1 egg

1 slice of brie

breadcrumbs

pepper

vegetable oil

cranberry sauce

Steps: 

1. Cut off the rind of the brie.

2. Roll the brie in small balls.

3. Heat pan of vegetable oil, about 1in deep.

4. In a bowl crack and egg and beat the yoke.

5. In another bowl 200g of breadcrumbs with desired black pepper to taste.

6. Dip the brie ball in the egg, then roll the brief ball in the bread crumbs and pepper mix.

7. Re-dip the brie ball in the egg, and a second time roll the ball in the breadcrumbs and pepper mix.

8. Pul the coated brie ball in the oil, cooking for only 1 minute on each side.

9. Serve immediately with cranberry sauce. For a good homemade cranberry sauce recipe, click here.
